Classic Chhole (Chickpea Curry)

Who isn't familiar with the classic chhole, the chickpea curry that brings water to anybody's mouth? Here's a quick recipe for when you are tired yet craving a spicy and tangy meal, helping you elevate your whole day. You can start off by using the following ingredients:

  • 1 cup dried chickpeas (or 2 cups canned chickpeas)
  • 2 tablespoons Chukde's Chhole Masala
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 2 tablespoons oil
  • Salt to taste
  • Fresh cilantro for garnish

To make Classic Chole (Chickpea Curry), start by soaking 1 cup of dried chickpeas overnight and then cooking them until tender, or simply rinse and drain 2 cups of canned chickpeas. Take a pot and heat 2 tbsp of oil in it, followed by adding one large onion, finely chopped, and fry it till it turns golden brown. To this, add two crushed tomatoes and fry for another 5-7 minutes, till the oil separates. Add two teaspoons of Chukde's Chhole Masala and mix it well for one more minute. After that, pour in the chole along with water as per the gravy's desired consistency and cook for about 10-15 minutes. Incorporate salt into your meal to taste, and serve chhole garnished with cilantro. This specific chhole goes very well with rice and naan.

Chhole Tikka Wraps

You can quickly begin the recipe of a chhole tikka wrap if you have the following ingredients in your kitchen waiting to be used:

  • 1 cup cooked chickpeas
  • 2 tablespoons Chukde's Chhole Masala
  • 1 cup yogurt
  • 4 whole wheat wraps
  • 1 cucumber, sliced
  • 1 bell pepper, sliced
  • Lettuce leaves
  • Lemon wedges

Take a bowl and mix your cooked chickpeas with chukde's chhole masala and yogurt. This addition will give the perfect tangy flavor to your dish. Later, take your wrap and layer each of them well with lettuce, cucumber, and bell pepper, and add a good amount of your chickpea mix. Roll the wrap and get ready to devour its heavenly taste. This is a quick recipe you can easily make if you are in a hurry, ideal for college students who barely get any time to feast in the middle of hectic classes and complex assignments.

Chhole Pulao

Your ingredients to achieve the best chhole pulao are as follows:

  • 1 cup basmati rice
  • 1 cup cooked chickpeas
  • 2 tablespoons Chukde's Chhole Masala
  • 2 cups vegetable broth or water
  • 1 onion, sliced
  • 1 tablespoon oil
  • Salt to taste

To make the basmati rice, rinse it in cold water, soak it for 20 minutes, and drain it. In a saucepan, pour some oil, add sliced onions, and fry until brown. Add Chukde's best spices and stir for a minute. Now, add the rice, which has been soaked and drained, along with the boiled chickpeas and broth. Stir the pot and bring to a boil, then turn the heat down, cover the pot, and cook for another 15-20 minutes or until the rice is done. When done, the rice should be fluffed using a fork and served hot, adorned with freshly chopped coriander leaves.

Chhole Stuffed Parathas

This is very similar to the wraps, but if it were infused with Indian style. Here is the list of ingredients required for you to master the recipe:

  • 1 cup whole wheat flour
  • 1 cup cooked chickpeas, mashed
  • 2 tablespoons Chukde's Chhole Masala
  • Water, as needed
  • Ghee or oil for frying

For starters, in a bowl, combine some whole wheat flour and water to make a semi-soft dough and keep it aside for 30 minutes. Then, in a different bowl, blend the chickpeas. After the resting period is finished, the dough is portioned into small balls, which are then rolled into small discs. Inside each of these discs, add a spoonful of the chickpea stuffing mixture and close it by folding it over and sealing it well. A stuffed ball of dough is gently rolled into a flat circle or paratha. Heat a tawa or frying pan over medium heat, add ghee, and fry both sides of the parathas until golden brown. Serve them hot, accompanied by yogurt or chutney.
