Panch Puran, literally meaning five spices in Bengali, is a mixture of Cumin, Brown Mustard, Fenugreek, Kalonji, and Fennel Seeds. It is believed to have originated in Bengal but is an integral part of Nort East Indian, Bangladeshi, Bhutanese, and Nepali cuisines too.
Typically made with equal proportions of the ingredients, the flavour may from region to region. With notes of sweetness, some warmth, and the pungency from mustard, it’s very versatile.
Its mild flavour and versatility make it omnipresent in Bengali cuisine. It's used in curries, vegetables, pickles, and tempering for dals. Ground Panch Puran is used in the preparation of fish, eggs, salads, soups, paneer dishes, and meat.
